Rooted in Côte d'Ivoire 

Chef Louise is the esteemed Pastry Chef and the creative force behind Pâtisseries Louise. Her husband, Djim, in his capacity as Chief Executive Officer (CEO), operates entirely behind the scenes, diligently guiding the company's expansion, strategic direction, and day-to-day operations.

Djim and Louise both grew up in Côte d'Ivoire (Ivory Coast), a French-speaking West African country with a deeply embedded French culinary legacy. In their childhood, traditional, high-end French desserts like mille-feuille, fraisier, and vibrant fruit tarts were not just reserved for elite occasions—they were woven into the fabric of everyday life. While growing up there, Louise discovered her profound, lifelong passion for baking, constantly creating elaborate treats for family holidays and friends' birthdays.

 

The Spark in Calgary

In 2019, the couple moved across the world to Calgary, Alberta, along with their two young boys. Settling into a new city, they quickly realized they deeply missed the authentic, nostalgia-evoking tastes and precise textures of the French pastries they had grown up eating.To fill that void, Louise did what she knew best: she began baking them at home using classic, uncompromised techniques

 

The Leap of Faith

Louise’s home-baked creations were extraordinary, beautifully mirroring the benchmarks of the finest pastry boutiques in France. Recognizing his wife's immense raw talent, Djim became the ultimate catalyst for the business. He looked at what she was creating in their kitchen and gave her a gentle, life-changing push, saying: "Why not just try it?"

 

Pâtisseries Louise: Taste. Elegance. Passion

Pâtisseries Louise distinguishes itself as an authentic artisanal pâtisserie boutique by offering a diverse selection of classic French pâtisseries in Calgary.

Their benchmarks for taste, quality, and excellence are directly inspired by the most esteemed pâtisserie establishments in France.

With Louise’s baking mastery and Djim’s entrepreneurship skills, they formally combined their strengths to launch Pâtisseries Louise:

  • June 2024: They opened as a small, home-based online bakery. Louise focused entirely on the culinary artistry, while Djim stepped up to manage the legal, logistical, and business operations.
  • December 2025: Driven by passionate word-of-mouth in Calgary, their "side hustle" exploded, prompting them to open a gorgeous physical storefront pop-up in Calgary's Inglewood neighborhood.
  • Current status: The boutique in Inglewood is closed as the owners transition to a larger facility. They outgrew the Inglewood space much faster than anticipated and chose to relocate rather than lock into a long-term lease.

 

Culinary Philosophy: Art on a Plate

For Chef Louise, high patisserie is a form of fine art and emotional connection. She deliberately focuses on complex technical cakes and delicate fruit tartlets rather than standard viennoiserie.


Every single creation is treated as an edible masterpiece. It is meticulously designed to evoke nostalgia, celebrate romance, and honor the timeless elegance of French tradition.
